Lard-Based Pie Crust
The recipe described below describes an essential ingredient in
many Italian delicacies - lard-based pie crust. Lard must be used because
it gives the crust a nice flaky texture.
- 3 cups sifted flour
- 1 teaspoon salt
- 1 cup lard
Sift the flour into a mixing bowl. Dice the lard into small pieces
and add to the flour. Slowly add water - a total of about 4 tablespoons
depending on how dry the flour is. Slowly mix together and knead
until the dough forms a ball. The bowl should be clean when finished.
Refrigerate for 30 mins. and then roll out. This should make enough
for a 10-inch pie with a healthy-sized top and bottom crust. The crust
