Mom's Anise Toast Cookies
These simple cookies are really tasty:
- 8 eggs
- 1/4 lb. butter
- 1 lb. sugar
- 4 tablespoons baking powder
- 1 teaspoon lemon extract
Melt butter and mix all the ingredients into a bowl. Add enough milk
to get the dough to hold so you can roll it out into sheets.
Roll into a bread roll. Cook first time until lightly brown at 350 degrees.
Cut into slices and lightly brown both sides of the cookies. Cook as a roll
first, slice and cook each side also.
Anise toast cookies are another variant of this:

These are a litte more complex:
- 6 eggs
- 1-1/2 cups sugar
- 1 cup vegetable oil
- 3 teaspoons baking powder
- a pinch of salt
- 2 teaspoons anise seed
- 3 cups flour
Beat eggs and add oil then sugar. Add flour until dough comes together.
Oil cooking sheet lightly. Drop 6 spoons of dough until roll forms.
Press top together, brown well and the brown sides. Cook at 350 degrees.
